Ninfa Laurenzo was an iconic Houston entrepreneur and businesswoman. Being a youthful widow, offering tortillas from a small storefront off Navigation, she became infamous when she released the Taco al Carbon to the world.
Ninfa Laurenzo, recognized affectionately as “Mama Ninfa,” dedicated her life supporting the progression of Houston’s youth, and particularly the students in Houston’s East Stop.
The Ninfa Laurenzo Scholarship Fund was founded in 2017 and it has impacted seventy-six (76) learners with scholarships since its inception. Mama Ninfa’s perception that schooling is the basis for anyone’s upcoming results is the inspiration of the Fund.

Maria Ninfa Rodriguez Laurenzo, or as most people referred to her, Mama Ninfa, was an iconic Houston restaurateur. Her preferred handheld sizzling steak taco, the now notorious Taco al Carbon, launched her modest tortilla factory into a cafe empire in Houston, and forever transformed the Mexican meals landscape Along with the Taco al Carbon now featured in dining establishments throughout the U.S.
Mama Ninfa devoted her lifetime to supplying a robust upcoming not just for her loved ones, but in the Hispanic Group in Houston’s East Finish by her continued provider all over her lifetime. She was a Founding Board Member from the Association to the Improvement of Mexican Americans (AAMA), Board Member-Houston Hispanic Forum, Board Member-Houston Metro Authority, named “Company Lady on the 12 months” because of the Countrywide Hispanic Chamber of Commerce, is during the Texas Women’s Hall of Fame, and also the Ninfa Laurenzo Early Childhood Center in Houston ISD is named in her honor.
